Domaine Seguin, located in Pouilly-sur-Loire, now extends over 20 hectares. The estate produce Pouilly Fumé wines that reflect the authenticity and richness of the region’s terroirs, thanks to meticulous, passionate work from vine to bottle.

Care for the vines :
a daily task

The vine is a hardy plant, but its fruit, particularly Sauvignon Blanc (known locally as Blanc Fumé), is extremely sensitive to the vagaries of the weather. The Domaine Seguin team, made up of Philippe, his family and three employees, ensures constant surveillance and meticulous care at every stage of the vine cycle.

The 22 plots of land on the estate are regularly hoeed or grassed, to encourage the life of the soil and improve the rooting of the vines. All manual work, such as pruning, disbudding and tying-up, is carried out by the estate team, guaranteeing constant attention. This proximity to the vines enables us to limit phytosanitary treatments as part of our integrated pest management approach, a practice validated by our level 3 High Environmental Value (HVE) certification.

The Harvest :
A key moment in winemaking know-how

With the quality of the grapes preserved, all that remains to be done is to determine the optimum date for harvesting, or « Ban des vendanges ».

Several berry samples are taken from each plot before harvest to assess grape ripeness. In addition to standard analyses (sugar content, acidity, pH), juice tasting is used to determine the optimum aromatic maturity of each vineyard. This approach ensures that each terroir expresses its full potential.

Special care is taken during the Sauvignon Blanc harvest. As soon as the grapes are harvested, they are gently pressed to preserve all the aromatic richness of the variety. The Domaine Seguin cellar, built on three levels, uses gravity to limit pumping, thus reducing the risk of oxidation, which is detrimental to the quality of the wine.

A precise
winemaking process

After sedimentation of the pressing juices (or « débourbage »), alcoholic fermentation takes place in temperature-controlled stainless steel tanks at a constant temperature of 17°C, preserving all the freshness and fruitiness of the wines. Fermentation lasts between 3 and 5 weeks, after which the wines are left on fine lees for 3 to 6 months, depending on the specific characteristics of each terroir.

The length of the ageing period is determined by weekly tastings of the different cuvées. The wines are then racked, blended and lightly filtered before being bottled in the estate cellars, to preserve the complexity and richness of the terroirs. In this way, each bottle reflects the delicacy and exceptionality of the unique Pouilly Fumé wine.

Revealing the expression of terroirs

Domaine Seguin cuvées showcase the diversity of the estate’s terroirs :

Pouilly Fumé Tradition : Vinification in temperature-controlled vats to preserve fresh, fruity aromas, followed by blending of different terroirs.

Cuvée Prestige : Produced from three parcels of old vines. Aged on fine lees for at least 6 months, this cuvée offers great aromatic complexity.

Cuvée 3 : This wine is aged in 500-liter barrels before blending, imparting a fine structure combining fruitiness and roasted notes.

Cuvée Sérénissime : This cuvée subtly reflects the marriage of terroirs, enhanced by ageing in 750-liter ceramic amphoras.
